You might go for an old kenwood ts440 with the vs1 synth.  only speaks frequency, but no menus.  all pushbuttons and knobs.
Another idea is one of the older tentecs like the omni, tritan, or the analog argosy.  Even the old 580 delta.  All analog, no menus and pretty easy to work with.
