Wow,

I never thought installing a usb to serial adapter would be such a pain!  Anyway, to make a long story short, going into device manager, then hardware and selecting ports (lpt and com) then finding the adapter once it's drivers have been installed.  The mcp-2000 software only works on com 1 through com 4 so you have to reconfigure to get everything taken care of and once you reconfigure your ports it is simple.
