I find that the difficult thing with eating lots of salad is
the preparation of the salad. It seems hard to "snack"
on lettuce. Lettuce (all types) need to be washed,
shredded, dressed, etc to eat and are just not as convenient.

Has any one got a good solution to this?

Buy a salad spinner. Wash and spin 1-2x of salad greens, You can even
store a head or two of washed lettuce in the salad spinner in the fridge.
Open and tear greens as needed. Wash and chop colorful salad veggies; stuff
into pint/quart Mason jars. Repeat every few days as needed. I'll give
you more tips in a year or so....when my new book is out!!! Loads of salad
info... :_))

Assemble salads in a jiffy: layer greens in a large bowl with a cover: top
with leftover sliced fish, fowl, or meat, and salad dressing made ahead
(weekends?). Or, pack salad greens in a container, then roll slices of
jerky or other leftover meat in salad (like stuffed cabbage leaves) or munch
cucumber or sweet bell pepper slices and jerky or pemmican (wrapped in
lettuce maybe) for a quick snack.

Thats it for now,
Rachel
