Because excessive carbs shift the balance of the hormonal system, which then
favors prostaglandins that tend to exacerbate allergic symptoms, while
suppressing prostaglandins that tend to ameliorate allergic symptoms.
( Although most paleo diets are sufficiently low in carbs to avoid this anyway.
And any paleo diet avoids grains and other foreign proteins that raise the level
of autoimmune activity - and thus eating paleo usually helps this sort of
problem all by itself.)
