my source is in british colombia , so i don't know if it is a possibility to
send it fresh to california . it is why i am proposing to send it dry. In
that case i am the source.

i don't know wholefoods market but i doubt i can find what i am looking for
(totally undenatured foods) in a commercial circuit . Because economically
it just don't make sens to go against the actual norms of quality ( that are
very bad). a pistachios for example are deeped in hot water then dry at hot
temperatures just after harvesting before any commercialisation. So i am
looking at farmers or even peoples with a tree in their backyard who are
willing to send them to me as they are. The same problem was for me with
unprocessed olives impossible to find the in commercial circuits. Mary from
the list harvested some for me , put them in a ziplock bag  and sent it to
me . in exchange i send her my products.
so if you are interested in dry beef right now i am drying one quarter...
And if you know any small organic pistachios or almonds farmers in
california let me know.( do you have local market in california)
do whole sale markets have a web site?
