Actually, they are corn - literally "baby" corn. I
read an article in a garden mag recently that said
they are harvested from the corn stalk right after the
husks begin to develop. Since this is a *very*
expensive, and inefficient, way to grow corn, they
have developed new corn varieties that create many
more husks than standard corn stalks.
Paleolithically speaking, this corn "shoot" is
probably much closer to the original maize plants than
modern corn.
