Any botany textbook.  Also try Prescription for Nutritional healing or any
good nutrition book.  It is because it interferes with the uptake of
iodine.  You can get around that by adding more iodine to the diet.  I do
know one vegetarian who in the winter, in her commune, crucifers were all
they had to eat and they all got goiters.
