Milk Free and Soy Free (and can be egg free too I would think)
Banana Muffins
1/2 cup margarine (I use Fleischmann's Light--milk and soy free)
1 cup sugar
2 eggs
1 1/2 cup mashed banana (I use 5-6 bananas)
3/4 tsp. baking soda
1/2 tsp salt (I omit this)
1 cup flour
Grease or line 12 muffin pan (my batter always makes 15 muffins??). Preheat oven to 350. Cream margarine and sugar together. Add eggs, beating well. Add mashed banana, beat on low til mixed. Sift dry ingredients together, and then add slowly to wet mixture, beating to mix well. Pour batter into muffin tins and bake for 25-30 minutes.
They are soooooooooo good, I would eat them even if my son was not allergic to milk and soy!!! He is a fussy eater but he would eat the whole plate of them if I let him!!! MMMMMMMMMMM delicious!!!
