Interesting points. Eating paleo only works in two
social/technological situations.
First, an actual hunter-gatherer existence,
and second, a 'modern' society with refrigeration,
semi-trucks, and supermarkets. For most of the
last 7,000 years (or so) eating a HG diet has been extremely
expensive.

In fact for the last 7,000 years the healthiest diet has
been an agricultural diet. Of course God recommended
it!

Trying to eat Paleo 2000 years ago would have been
less healthy than eating what was available.

Much like the whole argument about drinking
alcohol, and particularly wine. For most of the
history of the world wine has been better for you to
drink than water. Wine just made you drunk, the water
in most cities could out-right kill you.

The God-recommended diet has always been the one that
makes you healthiest for that period of history.
