Hello-
My twin sister and I suffered for years on the nutritionist and government pushed fat free diets.  We felt horrible and gained weight.  I was introduced to Ray Audette and his book from the Dallas Observer Article several years ago.  It immediately made sense to us and we began immediately.  We felt fantastic and our myopia was cured.  We then began to cheat on and off and it has now been years of trying to do it again.  I am so happy to find this list.

We met Ray Audette and found him to be a fountain of knowledge and very likeable.  Troy Gilchrist, we found to be a wonderful person as well.  They whole-heartedly believe and love to share.

That brings me to my first question.  I am familiar with Neanderthin but wonder if Paleo is different and how?  I have looked through the archives and on occasion see some things that may differ.

I have also tried to read all about raw meat and unfortunately it is so long and sometimes convaluted.  I used to buy a large hunk of meat from Whole Foods and eat it raw.  My sister read somewhere that freezing meat for a short time does the same to any bacteria as searing the outside of meat.  I really do not like freezing or searing but always have because of the "fear" of raw meat.  We now buy meat from a local butcher and I intend to find out how the cows are raised.  What should I look for?  I want to eat meat raw.  I make a pear drink with raw eggs and have never gotten sick from raw eggs.  I have never had ground beef raw.  I hear it is fantastic.  What should I look for with regards to ground beef that I want to eat raw?  Should I buy a certain kind of meat and ground it myself?  Are there locations in Texas (I live in the Dallas/Fort Worth area like Ray Audette) to buy "safe" meats to eat raw or are they all considered safe?  I never thought of eating chicken or pork raw.  I always thought the contaminants in them were pratically a sure thing.  Am I wrong?  You know, trichinosis and E. Coli?  There is just so much information in the archives that any information addressing raw meats and concerns I should or should not have would be greatly appreciated.

I am still breastfeeding my 14 month old, non-vaccinated, home-birthed son and would also be interested in any concerns with eating raw meat in that regards.  If for some reason I do get ill from raw meat can I pass it to my son through breastmilk?  I love eating oysters.  I can eat 8 dozen in one sitting but have abstained while breastfeeding and because it is expensive.

Any comments, information, links, books would be helpful as long as they are brief or concise.  I am still reading through the archives for raw meat since January 1999.  There are so many.
