the following crumb topping livens up any cake recipe
In a bowl combine
1 cup sugar [brown sugar if you can take it]
1 cup chopped apple or whole raisins
1 cup chopped nuts [walnuts, almonds or pecans work well]
1/4 cup any gf flour
1 teas cinnamon
1/2 teas nutmeg
1/2 teas ground cloves
1/2 stick butter, melted
combine and sprinkle over cake batter....bake. When cool, dust with
confectioner's sugar
**Note
I have found that if I include some of the spices used in the topping
into the cake batter, it adds a really nice touch. So, for example, I
would add a teas of cinnamon along with half teaspoons of nutmeg and
cloves to the cake batter.
Really good---I make this for our weekly coffee hour at church and it
disappears instantly.
