The Church should allow your son to partake in the Sacrament of
Communion by either the bread (wafer) or the wine.  A very gluten free
solution would be to avoid the wafer altogether and just take the wine.
I am a eucharistic minister in my church so when I am serving I take
part by drinking the wine.  On off weeks I abstain altogether.
