I haven't read Aajonus' book, or heard his rationale for the use of
honey with diabetes.
My opinion is that it would be wise to be very careful with this. Honey
has a fairly high glycemic index, about the same as some sugar cereals
I'm sure you'd try to avoid. I would be concerned about sugar spikes,
like the one you experienced.

I think there are a combination of factors that might be helpful -
namely,
1) getting the right balance of the right raw fats,
2) getting the right (gentle and gradual) balance of
protein/fat/carbohydrate to avoid sugar spikes,
3) the weight loss that comes from the improved diet, and maybe most
importantly,
4) getting a good excercise program going (which includes both strength
excercises and cardio excercise).
There are other factors that are important, too, (like sleep, and mental
health), but imo the things I mention above are the most critical
factors for diabetics to address first.
