So the enzymatique activity is constant and need to be uninterompted. ithink
they can't sprout if they dry out. .
The temperate climate nuts and seeds need to go thru a dormant stage to wait
for the right season to sprout. It is the reason for enzymes inhibitors, to
suspend the "ripening". Some seeds are drying out to pass the winter, others
and in particular nuts ,need to keep some moisture to stay alive.

I am eating instinctively and have no trouble digesting dried nuts when i
NEED them.
The  key is here the assimilability of a food is in the "expectation" to
receive it at that moment.
If the food is not  "original" in an undenatured state , our genetique don't
recognise it and our body don't "expect" it.
I f the food is not needed at that moment, the body is not ready to receive
it.
Assimilation is an active process for the body and is dependent on  what
kind of relationship is going on between the food and you at that moment.
The main thing for me to decide ,if a food is suitable to eat ,is to make
sure that i could find that food in that state ,in nature. And do i need
this food at this precise moment. To answer that  i trust my sense of smell
and taste and feelings while i am eating it

What diferentiate seeds like sunflower etc from grains is that they store
their energy differently.
The first ones in the form of mostly fats the others in the form of
starches.
Very diferent nutritionals qualities. the problems arise whith grain because
it seems that we are not intended to eat  starches as a stapple . More
simples sugars are our stapple(fruits and veggies). Our need for fats is
certainely related to our developped nervous system (rich in fats)
Fatty acids usable by the body is certainely the most lacking nutrient in
the north american diet.

I don't exclude grains ,i eat it occasionely, but i exclude modern form of
wheat selected for their starch content to make bread
