Seems that Sodium Nitrite is used in all processed meats as a flavor
enhancer and preservitive, also in cured meats like bacon, ham, etc.

Some folks said that Nitrites were a Carcinogen, causes Cancer, because
they form Nitrosamines in the digestive system.

Some other responses:

-Nitrates change to Nitrites on exposure to air.
-Sodium Nitrate is a component of Rocket Fuel.
-Used in fresh meats to increase shelf life.  Should ask butcher.
-The FDA decided to phase out Nitrates and Nitrites in 1980 but were
   pressured by manufacturers because the consumers have come to expect the
   flavor and color produced by Nitrates.
-Germany banned Nitrates and Nitrites.
-Nitrates have caused deaths from cutting off oxygen to the brain.
-Probably doesn't contain gluten.
-Causes headaches in lots of people.
-Bad for those with DH.
-Made from ammonia.
-Used in fertilizers such as ammonium nitrate.
-Other forms such as Potassium Nitrate etc.
-Heard from a fellow Celiac in my area.

Guess I will try to avoid Nitrates and Nitrites.
