I'd guess it's because they are eating grains, probably lots of them, and
probably beans, soy, etc. A double-edged sword for sure but these foods do
have more proteins, b vitamins etc.

FWIW, raw vegans who rely on lots of sprouts might stave off problems for a
while too. Who knows?
