I have never met any asian (whether vietnamese, chinese or japanese)
who eats, or used to eat, whole rice. That's why so many asians
suffered from beri-beri.
AFAIK, the poorest vietnamese peasants eat almost exclusively rice
(maybe more than 90% of the total calorie intake), a few leafy greens,
and some nuoc-mam (and no other animal products). I don't know how
many % eat whole grain ("red rice"), nor whether the process of
dehulling/blanching is done properly (so that some parts of the hull
still stick to the grain).
