I've had a few requests for this recipe so I'm just posting it to you all.
I hope you enjoy it. I've forgotten where I got it and don't want to step
on anyone's toes who may have been the one who sent it to me. Whoever you
are, I thank you!
CHEESE - MELTY CHEESE
4 oz. jar pimentos or substitute roasted red bell peppers
2 tbsp. arrowroot or cornstarch
1/2 c cashew nuts (washed in boiling water and drained)
1 c water
2 tsp. salt
1/4 c nutritional yeast flakes
1/4 c oat flour (I use spelt)
2 tbsp. lemon juice
1 tsp. onion powder
Blend well. Add 1 1/2 cups boiling water and cook until thick. Serve warm
over tacos, corn chips, steamed vegetables, etc. Store in refrigerator.
Yields about 1 1/2 pints.
