I missed the beginning of this discussion, so forgive me if I am stating
something that has already been mentioned.
I wonder if the issue with the sausage casings has something to do with
rennet. . The usual source of rennet is the stomach of slaughtered newly-born
calves. According to the FAN list of milk-derivatives, one should avoid
rennet if allergic to milk.
