In addition to Zukin's book, I'd recommend "The Milk-Free Kitchen" by Beth
Kidder. Very useable! In addition to more than 450 recipes, Kidder offers a
chapter on substitutes for milk products when cooking -- very handy.
Also, "The Uncheese Cookbook" by Joanne Stepaniak. Creative, milk-free cheese
alternatives!
However, I did not see any discussion in either book about soy milk
comparisons.
