Howdy, Listmates!
I just discovered I am not only "allergic" to canola oil, almonds and
celiac, I'm allergic to eggs! Egad! Well, that was a piece of a
three-year-long struggle to find out the bugaboos taunting my digestive
system. Anyway, I'd like to know if anyone knows of egg substitutes for
eating (like Egg Beaters) and how Ener-G Foods' Egg Replacer works for them
in recipes. Ener-G Foods claims that the replacer doesn't work extremely
well in mixes but does work well in baking from scratch (yuck, but I'm
learning). I also saw a recipe in Carol Fenster's cookbook on an eggless
mayonnaise which I'll be trying to make this evening. Anyone try this or
have a suggestion for eggless mayonnaise?
I also read in the archives and remember reading from the List about how
flaxseed can be used in recipes to replace eggs. Any thoughts on this will
be greatly appreciated. I will summarize my responses. And BTW, anyone want
a couple dozen free-range eggs? :*-(
