The responses on my question about the value of low-carb diets and the
protein issues for celiacs drew a variety of responses.
Protein is more abundant in wheat than in rice and corn, so a gf diet can
be lower in protein if one is not careful. (Tip from me - brown rice and
lentils have the same cooking time, so throwing a handful of lentils in
with the rice can increase protein.)
A non-vegetarian observed that vegetarians often find the gf diet too
restrictive and switch to an omnivorous diet.
Most of those who eat low-carb. find it helps them not gain unwanted
weight and that they simply feel better. One respondent felt that as a
type O this was best. Another cited improved cholestrol levels and blood
pressure.
Others observe that many low-carb. foods can be very profitable for their
manufacturers.
Others find they do well on a high-carbohydrate diet, although one person
notes that too much of any one food can cause problems with unwanted
weight gain and allergy.
