Mary, there is A LOT wrong with fat, but the scientifc discussions have
drifted from amount of fat to the type of fat. One positive benefit of
going on a paleo diet is the balancing of the ratio of omega 6 / omega 3
essential fatty acids (when really tries hard at it). Cancer, heart
disease, obesity, autoimmune diseases -- all correlate with a high fat
diet when the fats are mainly omega 6s. Wild game -- what our paleo
ancesters ate -- is low in saturated fat and rich in omega 3's; not so for
domesticated livestock that is grain-fed. Similarly, the eggs of wild
birds (including chickens) are rich in 3's; coop-raised (and most
"free-ranging") chicken eggs are not. Artemis Simopoulos has written a
highly readable and well-documented book on this subject-- see her The
Omega Plan.
