Yes, I think we all know that excess salt can increase thirst; this can
happen if I really overdo the salt (which is difficult for me, but
possible). Too much sodium can also cause your body to retain water in
order to prevent the concentration of sodium from increasing. In my case, I
also experienced chronic thirst while following a high-carb diet, so I doubt
that ketosis explains my symptoms, but thank you for the information.
I understand why my body can't retain water when I'm sodium deficient, but
have no idea why my thirst would be increased. Does anyone have an
explanation for this curious phenomenon?

Too much sodium will make you thirsty. In order to excrete excess sodium
(natriuresis) we must also excrete water. Incidentally being in ketosis also
makes you thirsty.
