As someone already pointed out, they are vacuum packed in tins,
otherwise they would go rancid. Sardines are one of the best
sources of EPA, an important w-3 fatty acid. You can get them
packed in olive oil, and thus get MUFA at the same time, and
calcium from the little bones.
