Kathy,
Considering the result of freezing my wedding cake
(yuck!), and the size of my freezer, I don't think
I'll freeze the cake, but it was a good suggestion.
And, at this time, we haven't decided on how large the
party will be, so I don't know how much cake I'm going
to need.

I did look at those "Kosher for Passover" cakes
yesterday.  They were rather flat.  They may have only
been single layers, though.  I don't think that one of
those cakes will be appropriate.

I think I'll start looking now for companies who will
make a dairy free cake.  I'm going to check out Bread
and Circus today, as Mark suggested, and see how large
they can make a cake.
