Hello All,
The experiment worked! Gourmet magazine, here I come. Escoffier, step
aside.
You can successfully make a wonderful cream of ANYTHING soup with baby
soy formula...it's rich and creamy and NON-DAIRY!
I started by putting up ten pounds of chicken parts in my stock pot
(with carrots, parsnips, carrots, onion, celery and parsley). Three
hours of gentle boiling, skim the fat and a wonderful stock results.
I made three soups. Cream of broccoli, cream of mushroom and
vicchysoisse.
Sautee 1 pint of shallots, onions and garlic for each soup in
1/4 cup of olive oil.
Add three quarts of your main ingredient (broccoli, mushrooms, leeks
and potatoes-sliced thin)
Add three quarts of rich chicken stock when the onions are translucent.
Boil until the ingredients are soft. Puree in blender. Add two cups of
baby soy formula. Add salt and pepper to taste.
The soups passed the taste test. My wife (Lisa) and three daughters
(12,11, 8) came home and headed straight for the kitchen.
How can 1 gallon of soup disappear so quickly???!!!
