When using GF flour, Bette Haggman's in particular, do you sift your flour?
I haven't been and found things to be sooooooo heavy. I just got through
making a batch of "crumpets" and decided to sift the flour and I couldn't
believe the difference. They make a beautiful english muffin for breakfast.
Also, do you "always" use dough enhancer and if so, why?
