The coconuts here come in two varieties: raw and cooked. The raw ones are
green, and sliced at your say-so. These are ususally found down at the
beach, where you usually have to be careful not to get bonked by one in the
process of lazing around. the other kind is roasted on a fire until nice
and cooked, then peeled from their outer cardigan to reveal the smaller,
intimate, shell. They are then iced for a brief while and served cracked
open. they are deliciously rich, while the raw ones are deliciously springy
and electrolighty. You can also get the dried elder coconut skin from
wherever; Thailand's great for coconut!
