It seemed to me that she was referring to the common practice of
placing solid foods along the pH scale according to the ash they
leave when burned.  Is that correct, Sandy?

As for the process of doing that, I would guess that water has to be
added to the ash and that there is some sort of standardized way of
doing that.  Anybody know?
