Yes, it's true that cooking neutralizes toxins in legumes and some
vegetables (such as rhubarb). This includes peanuts, which are a
legume...However, this raises the issue of cooked proteins and fats
(peanuts are high in both), as well as the aflatoxin issue. Aflatoxin is
a carcinogenic mold commonly found in raw and cooked peanuts.
In my view, the toxic legumes and vegetables shouldn't be eaten at all -
raw or cooked.
