Whoa. There is no gluten in rice. The word "glutinous" is
simply an adjective that describes the overt property of
stickiness of the particular variety of rice, with no implication
of gluten in its protein content.
Rice, I recall from Jenny Brand Miller's posting on Paleodiet, is
one of those paradoxical foods whose insulin index is lower than
what would be predicted from its glycemic index.
