Are you sure there wern't other factors?
-Maybe their diet has changed: they couldn't find as many tropical
fruits/vegetables
-Maybe they didn't have enough money, so their diet was rather
monotone.
I think that, since for middle-class Europeans who eat 75% cooked,
non-organic food there are no serious deficiencies, the fact that I
wash my carrots and my spinach (I don't like crunchy vegetables) will
IMO not undermine my health (I only wash about 5-10% of my food,
generally tubers and spinach, but not salad).
