I eat parsley with almost every meal and always if there is any meat.
Cabbage is great, so is romaine lettuce. I eat the entire stock of
Celery
including the leaves. Spinach is fun but I limit it to once a week or
so.
I love Kale raw, marinated with a little lemon, olive oil and red
onion.
When I was in FIJI, the people would eat anything, including the
things we
would through out here. Banana leaves are good. The stocks of
carrots and
other root vegetables. Go to a good vegetable market and see what
they
have. Think of it as an adventure.
