Instinct, eons old, doesn't always respond appropriately to new-
fangled things from outside the evolutionary context in which it
was born. After all, rats just LOVE to eat certain parts of cars'
electrical systems! Like Joe Alexander always says, just because
you can eat it and live to tell the tale doesn't necessarily mean
it's your natural food.
So.. where was I going with that? Well, I guess I'm mainly arguing
against the notion that just because grains have been a staple of so
many peoples for so many years, they must be a natural food for us
humans. I'm sure rats will be eating car parts for as long as there
are car parts out there. (Ditto for cats and bookbinding glue!)
Unfortunately, we don't have experimental groups of Hunza folks who
don't eat grain and Bulgarians who don't eat dairy with which to
compare those that do. They might be even MORE robust and long-
lived. They might not. Who knows?
