I volunteered to have a bunch of people over for Thanksgiving (a party
of about 10-12 people).  Needless to say, the possibility of *any* of
these folk eating raw is nil.  Although I've seen some good holiday
recipes in some of the sites, do any of y'all have any favorites or
suggestions on what a raw-food person is supposed to do?

I'm planning on spending the week in Hawaii with Raw friends, this is one of
the dishes I am considering.

Marinated Kale Salad

1 bunch fresh kale, washed and tear leaf into small pieces
2 medium avocado, diced

Marinade
1/2 cup red onion, sliced thinly
1/2 cup Flax oil
1/3 cup lemon or lime juice
nama shoyu (raw soy sauce) to taste

Mix the last 4 ingredients first, allowing the onion to absorb the oil and
really blend the flavors
Toss the remaining ingredients into the mixture

Variations, if onions are not appealing try zucchini or mushrooms

I would serve this with raw chicken or raw fish for myself and steam or
poach the meat for the non raw fooders.

Next:
What type of dehydrators are you using?  I saw an informercial on the
Ronco dehydrator (I know, I know) which is considerably cheaper than the
Excaliber I'm considering, but are there other brands out there that are
good (and not TOO expensive)?  Any suggestions will help.

The critical issue with the dehydrator is that the temperature be adjustable
(accurately) at the 110 or lower.  Many brands start at 160 to keep the
bacteria police appeased.  Excaliber is the only one I know that can be
adjusted in the 80's
