This time of year always causes a lot of confusion as to the gluten-free
status of "Kosher For Passover" foods and mixes.

The basic premise in determining if a passover mix or product is
gluten-free is: Matzo is _not_ Gluten-free !!

Basic matzo is made from Wheat flour, salt and water. This dough is
baked UN-leavened in flat sheets. In the bible it's referred to as
"unleavened bread".

Matzo farfel, matzo meal, passover cake flour, etc. is nothing more or
less than matzo broken or ground into different varying degrees of
texture.

Many Passover products are gluten-free because of the use of potato
flour, potato starch or corn starch being used instead of wheat flours,
as is during the rest of the year. Please be very careful when reading
the ingredients.

And as always: If In Doubt - Don't.

Hope this helps !!
