Came across the following post the other day on a message board....
"In 'Two Years Before the Mast' the crew, sick with scurvy, so savored
the raw onions
and potatoes supplied by a passing ship that they threatened the cook
with mortal harm
should he even attempt to cook any."
...But! Cooking makes them more "DIGESTIBLE"!!! Heaven forbid you eat
them RAW and full of all their undamaged nutrition! COOK them first,
make them more "digestible" (blood sugar spiking), and to heck with the
rest of the nutrients in them! :O ;) :D
Note: cooking destroys something to the tune of 80% vitamin C, 50-90% B
vitamins, and other sensitive factors, known and unknown...amino
acids..phytonutrients...breaks down the fiber..dehydrates the water
content...
