Hi,
I have been reading the list for about a month now (and food labels
for about 4 years). To my understanding of both CD and Organic Chem,
Glutamine, Glutamate, Glutamic acid, and glutinous rice have nothing to do
with Gluten. Can a chemist check me on this? (At least one member wrote
about fear of glucose!!)
I also understand that while dextrin may come from wheat, maltodextrin
comes from corn. Is that right?
What about cellulose. I suppose that it can come from any plant
matter, even wood pulp. I have found that cellulose is used in shredded
cheeses to prevent caking. Is it safe for us? How do folks deal with that?
