Originally, I began the NeanderThin diet to lose weight. Now, 53 lbs.
lighter, I am considering committing to this way of eating for life. The
one concern I have as a 47 year old woman abstaining from dairy products is
getting enough calcium to stave off osteoporosis. This brings me to a
question for all you paleo gurus. If one were to concoct a broth or soup
to be eaten daily for the purpose of maximizing calcium absorption, what
ingredients and/or cooking methods would you employ (i.e., would you add
spinach a vegetable high in calcium content but known to interfere with its
absorption, broken chicken bones, nonpaleo vinegar for its leeching
properties, etc.)?
