but if you feel you want to eat it anyways, have it with some orange juice.
Nitrites are altered by intestinal bacteria into nitrosamines, which is what
may cause the cancer.  Vitamin C has been shown to reduce the conversion of
nitrites into nitrosamines, which theoretically may block the carcinogenic
effect.
