There is substantial clinical and epidemiological evidence that cereal
grains may play a major role such diverse autoimmune diseases as multiple
sclerosis, insulin-dependent diabetes, rheumatoid arthritis, sjogrens
syndrome, dermatitis herpetiformis, and IgA nephropathy.
In addition, the phytates in cereal grains have long been known to bind to
many minerals, and may contribute directly to rickets, osteoporosis,
stunted growth, anemia, zinc deficiency, and other health problems due to
excessive mineral depletion.
Studies of ancient remains showed that when humans went from being
hunter/gatherers to agriculturalists, people got a good bit shorter (4-6
inches), incidence of significant tooth decay and rickets occurred for the
first time, and obesity and other diseases started to become a serious
problem.
It has also been shown that among hunter/gatherers who maintain traditional
lifeways, cancer is virtually nonexistant despite the fact that their
longevity is more than high enough to make it possible for them to develop
it. They don't. Now of course there are other factors that are different
between civilized people and hunter/gatherers, so diet may not be the only
factor (or may not even be the primary factor, though I'll bet it is).
