The letter for chefs, which I have printed and carried to two restaurants,
includes licorice as something containing gluten.  I believe licorice is
made from the bark /root of a tree or bush, and I think that is   gluten
free and only  most licorice candy that contains gluten.  Am I wrong?  The
pieces of bark are very sweet and overwhelmingly licorice flavor when
chewed.  Various home remedies use pieces of that in brewed tea.
