Last night I made a quick, easy and tasty one-pot dinner, and thought I'd
share the recipe, since "fast food" is barely in our vocabulary anymore!
This is adapted from a recipe in Woman's Day last May.
Skillet Mexuccini
In a 10" skillet brown 1/2 - 1 lb. ground beef.
Remove from skillet.
In the same skillet combine:
1 -11.5 oz. can V8 juice
3/4 cup water
1 tsp chili powder
1/4 tsp. garlic powder
1/4 tsp. ground cumin
Bring to a boil and add:
4 oz. thin GF spaghetti broken into thirds
(I used Westbrae Angel Hair corn pasta)
Return to a gentle boil and cook, uncovered, 4 minutes, stirring often,
until the pasta is limp.
Stir in 1 small zucchini, cut in small chunks. (If you use rice pasta,
you could add some corn as well.) Cover, reduce heat and simmer 4 - 5
minutes, stirring once or twice, until pasta is firm-tender and liquid is
almost absorbed but still saucy.
Stir in the cooked ground beef. Sprinkle on 1/2 cup shredded cheddar
cheese, if desired, and serve. Makes 3 -4 servings.
