I would say that many nutrients would be an issue if a large portion of
the diet did not include red meat and/or poultry with skin and fat etc.

On the average every "choice" (or 30g uncooked serving portion) of
"lean" animal source protein would yeild 7 grams of protein + 3 grams of
fat -- that alone provides a fairly significant % kilojoules from fat.
