I'd like to see some simple organ meat recipes. I cooked up some onions and
beef kidney in a frying pan the other day, but the result was tough and the
taste too intense. I like liver and onions, but I haven't tried any other
organ meats.

A local market sells "sweetbreads." That's the pancreas, isn't it? What's a
good way to cook that stuff?
