What does the List think of organ meats?

I am searching for diverse meats. My son has a lot of allergies and it was
recommended to me to rotate his diet as much as possible.

So, if I give him beef liver, for example, is that diverse from ground beef?

Are organ meats sufficiently diverse to be considered a separate meat?

Also, where do you buy organ meats?

What about chicken livers, other organ meats?

Right now his diet consists of ground turkey, chicken, ground beef, ground
ostrich, buffalo, tuna, salmon, and so forth. I try to rotate as much as
possible.

Also, would appreciate finding a recipe for pemmican.
