Actually, I would have thought the same thing. Then something like ten years
ago we heard that there actually were some studies done on the relative
bacteria levels of various cutting board materials, and wood was the best to
use (ie most hostile to bacteria growth). You wouldn't think so, 'cause it
seems it's more porous, etc, but that's what I read! So we've been using
wood
ever since. ;-))
