This book also has directions for building a smoker, a smokehouse, a
dehydrator, and bunches of other things we paleo-types might find useful.
I found a copy in the local library before I got my own copy.

Also, you might want to query the Mother Earth News people about designs
for building your own Solar Food Drier.
They may have a web-site.  Dunno.
Just soak the meat, fish, etc a few hours or overnight, or a day or
three, if it's tough (depending on how thin you slice it), in a marinade.
 Spiced fruit juices would be good marinades.  Experiment.
