I'm not so sure that it would be; for instance, boiling bones for a while
gives you gelatin.  (Ever made chicken soup?  You boil the bones down to
get the stock.  If you let that cool in the fridge, you get
chicken-flavored gelatin, covered with a layer of hardened fat, which you
can then pick off.)  Well, yes, that's cooking; but I don't think you're
getting anything inherently as unnatural as, say, bread is.

The 'illegal' parts would be the sweeteners and flavorings.  If one made
gelatin with fruit flavorings, it might not be so bad; but eating that much
fruit/fructose in one sitting seems a bad idea.
